Purpose of Refrigeration Equipment: The Purpose is to keep the Product in HYGIENIC Condition and in specific TEMPERATURE range. Here are some of the tips for using your commercial refrigerator efficiently and easily maintaining them for their long life.  


Hygiene & Storage: Storage area should be kept Dry, Clean & well ventilated. Dispose off all the used Boxes, Packets & Cartons after use. There should be at least 6” gap around the Refrigerator for proper heat dissipation into the atmosphere.



Inside the Cold Room the product should be stored at least 6” on a Rack / Pallet to get access to the Floor. You should frequently clean the Doors, corners, Floor (Bottom) and Gaskets of Doors.

Space Management: Food Items & Other Items, Fresh Food & Cooked Food and Toxic & Non-Toxic items should be stored separately and should be properly marked. You should always label each packet with storage date so that they are consumed before the Expiry dates.


Cold Room should have sufficient space and storage shelves / racks for the quantities of stock held. Products should never be stored too high and should be easily accessible. In Freezer, food should be covered with plastic / Aluminium films to avoid Freezer Burn.

Some Cold Room Maintenance SOP: Do not store material below Evaporator, as it may block air circulation. Also material should not be stored near the drain pipe as it may get damage and have problems. Bi-monthly / Monthly Clean the Condensing Unit & Evaporators and their Fans for proper functioning of the Refrigeration Unit.


Ante Room for Freezer Room is recommended to avoid Fresh Air ingress in the Freezer. Stand-By Unit is advised for Ice-Cream Freezer, because if Ice-Cream melts, it’s a huge loss. Tighten all Electrical connections at least once in a month to avoid electrical issues.

Important Tips: The Deep Freezer / Walk In Freezer should be defrosted regularly and should be kept Dry & Clean. Refrigerator should not be overloaded as it directly affects the life of Compressor and other components. Also the Door should be opened to the minimum when required.



Never put Hot Product directly into the refrigerator. Products like Ghee, Fat and Butter should be kept away from smelly pungent products as they catch the smell strongly. Select the Temperature of storage depending upon the product to be stored and the time for which it is to be stored.
